Smith's Gourmet Macaroni & Cheese

prep time 20 minutes cook time 45-60 minutes serves 6-8 people

Ingredients

16 oz. pasta

3 cups cream sauce (recipe follows)

Buttered bread crumbs (recipe follows)

FOR THE SAUCE:

6 tbsp butter

6 tbsp flour

3 c milk

½ lb Smith's Farmstead Gouda, shredded

(we prefer Smoked or Garlic!)

½ lb Smith's Farmstead Sharp Cheddar, shredded

Salt and pepper to taste

FOR THE BUTTERED BREAD CRUMBS:

2 tbsp melted butter

½ c bread crumbs or panko

Directions

*if baking in the oven instead of a crock pot, preheat oven to 350°F

FOR THE SAUCE:

Melt butter in a medium sauce pan. Stir in flour to make paste. Slowly add milk and stir until smooth. Cook over medium heat, stirring constantly, until the sauce comes to a boil. Boil for two minutes, stirring constantly, until the sauce thickens. Turn the heat to low. Add shredded cheeses and stir until they are completely melted. Add salt and pepper to taste.

FOR THE BUTTERED BREAD CRUMBS:

Melt 2 tbsp butter in a small pan. Add ½ c bread crumbs or panko and stir until blended and toasty.

ASSEMLBING THE DISH:

Cook pasta according to the directions on the box. Drain. Pour half of the pasta into a greased 3-5 qt crock pot or 13x9 baking dish. Cover with half the sauce. Add the rest of the pasta and the remainder of the sauce. Top with buttered bread crumbs. Cook on low for one hour until bubbly in the crock pot or 45 minutes in the oven.
